Updated guide on how to properly uninstall display drivers (Nvidia/Vista), and questions on modding inf files?

I've seen plenty of guides, but most I can find are usually years old. Trying to find an up-to-date guide on how to properly and completely uninstall drivers (Nvidia/Windows Vista), to do a clean install of other drivers. Also, I hear a lot of people talk about modding inf files in drivers. How do you do this, and why would you do this?
