I am planning on getting a coolsat 8000. Besides the reciever is there any other equipment needed. I plan on receiving channels from the Nimiq 1,2 and 3 satellites.

We can answer your question better if we know what equipment you already have? Are your replacing an existing receiver or adding a second one?

Please tell us details on your
Type of Dish(s), type of LNBs and type of switch.

Are you using 1 dish? 2 dishes?
If you're using 1 dish, are you using a bracket with 2 LNBs (the thing that sticks out of the dish) or does your dish skew?
Are they single or dual LNBs?
What type of switch (the thing the wires connect to before going to your receiver when coming from the dish) are you using?
Are you getting rid of your other receiver or are you adding a second receiver in a second room?

only a single eye on a dual LNB bracket and only using one dish. I am wiring it directly into the receiver as I won't be using the other receiver presently. Should I be using a dual LNB to receive the HD channels with the 8000 receiver?

Each LNB either dual or single, can only pick up 1 satellite signal. Dual just means you can hook 2 wires to go to 2 separate receivers.
What I don't understand is, you said you are getting both Nimiq 1,3 and Nimiq 2? This is not possible with only 1 LNB. You would need 2 LNBs to do this. Also, you would need a switch to do this as well. And, a special bracket or a dish that skews (tilts sideways) in order to acheive 2 different satellites all at once as they are in different posistions in the sky.
