Chimachangas
This is a tasty Chimachangas recipe with ground beef flavored with a taco sauce.
1 lb of ground beef
1 large onion, chopped
1/2 teaspoon of ground cumin
1/2 cup of taco sauce
12 8-inch flour tortillas
2 cups of cheddar cheese
2 cups of shredded iceberg lettuce
2 cups of chopped green onions
Vegetable oil for deep-frying
Brown the ground beef in a large pan on medium heat. Drain the fat from the meat. Add the chopped onion, cumin and taco sauce. Place about 3 tablespoons of the filling onto the flour tortilla into the center. Fold the tortilla, making sure to tuck in the ends. Fasten with wooden toothpicks to secure. Continue until all 12 tortillas are completed.
In a deep fryer or large pot heat the oil on high heat. Make sure that it is at least 4 inches of oil to cover burritos. Drop the folded burritos into the hot oil and fry until golden brown in color in about 1-2 minutes. Drain on paper towels and keep warm.
Serve with cheese, lettuce and chopped green onion.
