Chocolate Mint Sugar Cookie Drops

2 1/2 c all purpose flour
1 1/2 tsp baking powder
3/4 tsp salt
1 1/4 c sugar, divided
3/4 c vegetable oil
2 eggs
1 tsp vanilla
1 10 oz pkg. Nestle's mint flavored chocolate chips
Preheat oven to 350 degrees. In small bowl combine flour, baking powder, and salt. Set aside. In large bowl combine 1 cup sugar and vegetable oil; mix well. Beat in eggs and vanilla extract. Gradually add flour mixture. Stir in mint flavored chocolate chips. Drop by teaspoonfuls onto ungreased cookie sheets. Shape into balls and roll in remaining sugar. Bake 8 to 10 minutes.
