Moms Fried Spinach:

1 can spinach 14oz (drained!)
2 tablespoons thinly sliced shallots
1/4 cup onion,minced
3 tablespoons extra virgin olive oil
2 eggs
1 tablespoon minced garlic
1 teaspoon salt
1/4 teaspoon freshly ground black pepper


In a separate bowl beat the eggs ,add the salt and pepper.

In a medium saucepan,heat 3 tablespoons of extra virgin olive oil over medium-high

heat.Add the shallots,onions and garlic and cook for 1 minute.
Add the spinach, then cook for about 5 min.stirring every minute or so as to not burn.

Add eggs,stir for 1 minute,serve
makes about 4 servings..

( Moms recipe- The only way she could get us kids to eat "spinach"..Now my kids eat it

and love it)
