What are some disadvantages to having 2 hard drives but a RAID-0 config?

No fault tolerance. Disk failure destroys the array. Small increase of speed from higher bandwidth vs greater danger of losing data. If speed is the only reason for RAID 0 and it is just buy faster hard drives.
 
I run a raid 0 myself across 4 10,000 rpm raptor hard drives. If your operating system and programs are on this set of drives, your boot times and load times for games will be extremely quick (ie, my computer actually takes longer to post than it does to boot). The down side is, if any one drive craps, all data is lost. However, thats not a big deal to me because I burn anything important, and most ppl use one hard drive anyway, meaning if it goes, all data is lost anyway. Also, hard drives don't fail very often anyway.
