Texas Stew

Cooks in the oven then in a pot - Time is 2 days to complete.
This one is a test of your knowledge of food - ingredients are judged by the amount of people you feed. Experience in the kitchen is needed as some guess work is required.

Ingredients
Large Baking Potatoes X 3 to 5
1 Lbs of carrots large in a bag
1 onion
4 oz ast. Mushrooms
Peppers hot or not
2 stalks of celery - leafs needed
A Beef Roast cheap cut is ok
6 slices of hard wood smoked bacon
6 oz of Worcestershire sauce
5 table spoons each - fine minced Garlic - Onions - Chives & Celery leaves
Salt - Pepper
A 1 gallon zip bag
Spices XXX house blend
XX Seasoned salt - Garlic powder - Onion powder - Paprika - Mrs. Dash no salt - Greek seasonings no salt - Mix to your taste heavy on the onion powder - & Greek seasons XX

Ready to start the first day
Tenderize the roast by stabbing deep with a small knife all over and over - cover the roast with the sauce salt and pepper to taste. Place in the zip bag the minced Onion Garlic Chives & Celery leaves - along with the Worcestershire sauce. Rub roast with some house mix spice. Place the roast in the bag remove access air and zip - If needed cut roast in half to marinade in the bag.. Now place bag in fridge and turn when you think of it - Also squeeze the roast some times and let it stay over night in the fridge longer if you can.

Day 2 or 3

Cut bacon in half Line a baking dish with foil - heat oven to 350
Cut big chunks of the veggies. 1 ½ inches. Onions included
Toss in a bowl with olive oil until covered. Place veggies on the foiled baking dish single layer
Sprinkle liberal with house mix spice and top with bacon slices Random pattern. Bake in the oven until bacon is crisp - If the veggies start to burn on the edge mix with the oil and spice in the pan. Remove from the oven to cool.

At the same time the veggies are cooking you can cube the roast a little smaller then the veggies not much just a little. Cook the cubed meat in a pot covered with water and house mix spice - and boil until soft very soft - If extra liquid is needed add some marinade to keep meat covered. When soft add veggies and stir carefully as not to mash them and let them steam on top simmer in the juice on the bottom stir until thoroughly heated. You can remove the bacon if you like or crumble it in. When heated thoroughly and veggies are soft add to the pot a thickener if needed. - à 1 table spoon of flour 1/8 teaspoon of corn starch some house mix spice and cold water to make a thick runny soup. Stir this in slowly and coat all veggies and meat ß- - Turn off the heat and let it sit stirring a little b4 serving. Texas stew is great with corn bread hot n buttered. The roasted veggies add a great twist. Try not to get the stock to thick but its all good if you do. Experienced cooks can do this meal easy. Other ways to enjoy this is on cold days your heat runs less as you use the oven - - Try hot peppers they open the nose .
and you can add any veggies you like
