GTA V Walkthrough: Mission 15 - The Jewelry Store Job (The Smart Approach):
To play either heist version, it will depend on the options you chose at the end of the "Casing the-Jewelry Store" mission.
If you chose "Loud and Dumb" You will only require 1 heist setup mission: called Carbine Rifles.
The Jewelry Store Job (The Loud and Dumb Approach) heist setup
GTA V Walkthrough: Mission 12 Carbine Rifles:
Wait for Lester to contact you, it will not take very long. Once he does, head to the way point on the map.
It's the LSPD tactical vehicle Lester was talking about. Its fast so have a fast car to intercept it.
Get ahead of the vehicle and use your car as the cover for Michael. Use Michael's special ability for firing at the vehicle. As long as you maintain your cover, it will be a piece of cake.
Now jump in the tactical vehicle. Instantly a wanted level of 3 stars will be received and the police will be everywhere! They usually keep to the main roads. So it's easiest to lose the cops if you get off them.
Now return to the garment factory and begin this first major heist.
To get gold:
If you chose "Smart" You will only require 2 heist setup missions: called Bugstars Equipment and BZ Gas Grenades.

GTA V Walkthrough: Mission 13 Bugstars Equipment:
Wait for Lester to contact you, it will not take very long.
Go to the Bugstars warehouse in the Port of Los Santos.
The van can be stolen in two ways.
1) You can enter the front of the warehouse, but doing so causes the Bugstars employees to become aggressive. If you have a weapon drawn the employees will run in fear and you will instantly get a two star wanted level.
2) Alternatively, you may sneak through the back of the warehouse, disable any employees with a stealth attack, and then drive the van away without detection. If you want gold, you need to do it this way.
However you choose to do it, once done return to the garment factory and Lester will call you with the second heist set up mission, BZ Gas Grenades.
To get gold:

Once he calls, head to the way point on the map.
It's the Humane van Lester was talking about. Its fast, so have a fast car to intercept it.
If you want gold, shoot the back doors and steal the cargo when it falls out. Use Michael's special ability to aid in firing at the doors.
Lose your wanted level if necessary and return to the garment factory and begin this first major heist.
To get gold:

Note: If you chose "The Smart Approach" start here. For "Loud and Dumb" scroll down.
For the The Jewelry Store Job (The Smart Approach) only:
If you haven't yet, drive to thee garment factory and begin the mission.
After the cut scene, leave the factory and get in the van. Make sure and wait for Franklin to get in.
Head for the same spot where you climbed to the roof in the Casing the-Jewelry Store mission.
Once you get there you will be automatically switched to Franklin.
Climb the roof and run to the same spot that you took pictures with Michael.
Now, Equip your BZ-Gas Grenades, and aim directly in the middle of the yellow marker. It's on the ventilation system. Aim elsewhere and you'll miss the target.
Once done, you will be automatically switched to Michael.

If you chose "Loud and Dumb" begin here:
If you haven't yet, drive to thee garment factory and begin the mission.
After the cut scene you will be automatically switched to Franklin.
Leave the factory and get in the van. Make sure and wait for everyone to get in.
Head for the jewelry store.
Once there, you will be automatically switched to Michael.
* Both heist versions will continue the same way from here*
Run to the jewelry displays and smash them with you're gun. Ignore the cases that are already smashed open. You have about 2 minutes to get as much jewelry as you can.
Run for the door, as soon as your hacker finishes his countdown. Michael will say his famous movie line and you will be automatically switched back to Franklin.
Now its time for a getaway!
Follow your crew members through the city. Limit your special ability while you're on the streets.
Make sure to jump down to the freeway from the break in the overpass barrier. Use your special ability if necessary, as you can fall off your bike very easy.
You should use it to enter the tunnels here as well.
Once your in the tunnels, take your time weaving through the turns, as the cops will not be a problem here. Use your special ability as necessary for tight turns.
Your crew members will warn you of upcoming challenges in advance. So Pay close attention to what they are saying over the radio.
When you finally exit the tunnels, you will be automatically switched back to Michael. Use this heavy duty truck to ram the cop cars out of your way.
The take for each of the characters depends on who you chose for the job and how quickly Michael managed to smash and grab from the jewelry cases.
If you chose pros for your crew, the heist will go smoothly. However, you will end up with less money at the end.
If you chose amateurs for your crew, the alarm will probably go off early killing the time you have in the store, and you will lose one of the crew members during the escape. But if you're fast, you can pick up his part of the score. This will happen right before you enter the tunnels.
To get Gold in both the Dumb and Smart approaches:

- Quick Grab - Steal the jewelry within 50 seconds. Move quick and waste no time. Use logical movements around the Jewelry store, rather then random.
- Protégé Protected - Protect Franklin during the River chase. Do not let any cop cars bother the motorcycles, and as soon as you switch to Michael, waste no time and ram the police cars right away.
- Clean Sweep - Steal the jewelry from all of the 20 glass cabinets. Just be smart about it and Begin at one side of the store and end on the other.
